pea and pomegranate guacamole

 

Welcome. You have officially reached guacamole nirvana, just less calorie-laden. We have substituted avocado with sweet juicy little peas, added lime, jalapeno and coriander, then studded it with jewel-like pomegranate seeds.

 

It’s almost too pretty to eat. Almost….

 

PEA & POMEGRANATE GUACAMOLE

1 SERVE - 165 CALORIES

 

1 bag frozen peas

1 yellow onion

1Roma tomato

1Jalapeño pepper

Juice of 1 lime

Sprigs of coriander

Sea salt to taste

Pomegranate seeds (optional)

 

To serve

1 piece pita bread

 

  • Defrost a frozen bag of peas and mash them up in food processor, or by hand. Add to a large bowl.

 

  • Add the diced onion, tomato, jalapeño, lime juice, coriander, and salt and stir together until everything is mixed together well.

 

  • Garnish with pomegranate seeds and serve with 1 slice of pita bread
